Ingredients for 4 small or 2 large portions for 10 inch pan : 12 inch Pan
3 large room temperature eggs : 12 inch pan 4 eggs
2/3 cup room temperature milk: 12 inch pan 1 cup
packed 1/2 cup flour (really pack the measuring cup firmly with flour) : 12 inch pan 1 cup (but just a hair under)
1/4 tsp vanilla extract : 12 inch 1/4 +1/8
1/4 tsp salt: 12 inch 1/4 +1/8
3 tbsp clarified butter no more is really needed for this
Mix everything together (but butter) in a blender
Pre Heat 10inch Cast iron skillet High Heat
put in butter (Ghee)
Pour batter in center
- Bake at 425 F. 20-25 min
* garnish with melted butter, fresh lemon juice (Meyer if you can find it), and powdered sugar.
